Ingredients
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 onion, diced
- 2 cloves garlic, minced
- 4 beaten eggs
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: Fresh herbs (dill, parsley)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
- Add chopped spinach and cook until wilted.
- Remove from heat and mix in feta and beaten eggs. Season with salt and pepper.
- Pour the mixture into a greased baking dish.
- Bake for 30 minutes or until set and slightly golden.
- Let it rest for 10 minutes before slicing and serving.
