Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 beaten eggs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Fresh herbs (dill, parsley)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
  3. Add chopped spinach and cook until wilted.
  4. Remove from heat and mix in feta and beaten eggs. Season with salt and pepper.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 30 minutes or until set and slightly golden.
  7. Let it rest for 10 minutes before slicing and serving.
