Delicious and wholesome muffins packed with apples and oats, perfect for breakfast or a snack.
Ingredients
- 2 cups rolled oats
- 1 ½ cups all-purpose flour
- ½ cup sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- ½ tsp salt
- 2 large eggs
- 1 cup milk
- ½ cup melted butter
- 2 cups chopped apples
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix together the rolled oats, flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, beat the eggs and combine with milk and melted butter.
- Fold in the chopped apples to the wet mixture.
- Gently combine the dry and wet ingredients until just moistened, being careful not to overmix.
- Divide the batter evenly among the muffin tin cups.
- Bake for 20 minutes, or until a toothpick inserted comes out clean.
- Let cool for a few minutes before serving.
Notes
Serve warm with butter or honey. Store in an airtight container for up to 3 days or freeze for longer storage.
