Description

Delicious and wholesome muffins packed with apples and oats, perfect for breakfast or a snack.


Ingredients

  • 2 cups rolled oats
  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 2 large eggs
  • 1 cup milk
  • ½ cup melted butter
  • 2 cups chopped apples


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together the rolled oats, flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, beat the eggs and combine with milk and melted butter.
  4. Fold in the chopped apples to the wet mixture.
  5. Gently combine the dry and wet ingredients until just moistened, being careful not to overmix.
  6. Divide the batter evenly among the muffin tin cups.
  7. Bake for 20 minutes, or until a toothpick inserted comes out clean.
  8. Let cool for a few minutes before serving.

Notes

Serve warm with butter or honey. Store in an airtight container for up to 3 days or freeze for longer storage.
