Description

A quick and comforting fried rice recipe that brings joy to any table with its fragrant aroma and delightful flavors.

Ingredients

  • 4 cups day-old rice
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a wok or large skillet over high heat.
  2. Add mixed vegetables and sauté for 2-3 minutes until cooked but still crisp.
  3. Push veggies to one side and pour in beaten eggs, scrambling until cooked.
  4. Add the cold, day-old rice to the pan, breaking apart any clumps.
  5. Drizzle soy sauce and sesame oil over the rice and mix thoroughly.
  6. Keep stirring on high heat for another 3-5 minutes until everything is well combined and heated through.
  7. Season with salt and pepper, and garnish with chopped green onions before serving.

Notes

For best results, use cold, day-old rice. Avoid overcrowding the pan for a better texture.
