Ingredients
- 4 cups day-old rice
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a wok or large skillet over high heat.
- Add mixed vegetables and sauté for 2-3 minutes until cooked but still crisp.
- Push veggies to one side and pour in beaten eggs, scrambling until cooked.
- Add the cold, day-old rice to the pan, breaking apart any clumps.
- Drizzle soy sauce and sesame oil over the rice and mix thoroughly.
- Keep stirring on high heat for another 3-5 minutes until everything is well combined and heated through.
- Season with salt and pepper, and garnish with chopped green onions before serving.
Notes
For best results, use cold, day-old rice. Avoid overcrowding the pan for a better texture.
