Description

A delightful twist on classic comfort food combining creamy mac and cheese with the rich flavors of French onion soup.


Ingredients

  • 8 oz elbow macaroni
  • 1 lb boneless, skinless chicken breasts
  • 3 medium onions, sliced
  • 2 cups shredded cheddar cheese
  • 1 cup Gruyère cheese, shredded
  • 2 cups milk
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish


Instructions

  1. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium heat. Add sliced onions and cook slowly, stirring frequently, for about 20 minutes until caramelized.
  3. In the same skillet, add the chicken breasts and sauté until golden brown and cooked through, about 5-7 minutes per side.Remove and dice the chicken.
  4. In a large bowl, combine the cooked macaroni, chicken, caramelized onions, milk, and cheeses. Season with salt and pepper.
  5. Transfer the mixture to an oven-safe dish and bake at 350°F (175°C) for 15-20 minutes until bubbly and golden on top.
  6. Let cool slightly before serving, garnished with fresh herbs.

Notes

For a gluten-free version, use gluten-free pasta. You can also experiment with different cheeses to suit your taste preferences.
