A delightful twist on classic comfort food combining creamy mac and cheese with the rich flavors of French onion soup.
Ingredients
- 8 oz elbow macaroni
- 1 lb boneless, skinless chicken breasts
- 3 medium onions, sliced
- 2 cups shredded cheddar cheese
- 1 cup Gruyère cheese, shredded
- 2 cups milk
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
Instructions
- Cook the macaroni according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil and butter over medium heat. Add sliced onions and cook slowly, stirring frequently, for about 20 minutes until caramelized.
- In the same skillet, add the chicken breasts and sauté until golden brown and cooked through, about 5-7 minutes per side.Remove and dice the chicken.
- In a large bowl, combine the cooked macaroni, chicken, caramelized onions, milk, and cheeses. Season with salt and pepper.
- Transfer the mixture to an oven-safe dish and bake at 350°F (175°C) for 15-20 minutes until bubbly and golden on top.
- Let cool slightly before serving, garnished with fresh herbs.
Notes
For a gluten-free version, use gluten-free pasta. You can also experiment with different cheeses to suit your taste preferences.
