Instructions
- Gather all ingredients: flour, eggs, salt, and olive oil.
- Make a mound with the flour on a clean surface and create a well in the center.
- Crack the eggs into the well and add salt and olive oil. Beat the eggs with a fork, incorporating flour gradually.
- Knead the dough by hand for 8-10 minutes until smooth and elastic.
- Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
- Divide the dough into four equal pieces and cover with a damp cloth.
- Flatten one piece slightly and dust the work surface with flour.
- Roll out the dough using a rolling pin or pasta machine to your desired thickness.
- Slice the rolled-out dough into your preferred pasta shape.
- Dust cut pasta with flour and set aside.
- Boil a large pot of salted water and cook the fresh pasta for 2-4 minutes.
- Drain the pasta, reserving some cooking water, and combine with your favorite sauce.
- Serve immediately.
