Ingredients

  • 2 cups All-Purpose Flour
  • 3 large Eggs
  • 0.5 teaspoon Salt
  • 1 tablespoon Olive Oil
  • 1 handful Flour for Dusting


Instructions

  1. Gather all ingredients: flour, eggs, salt, and olive oil.
  2. Make a mound with the flour on a clean surface and create a well in the center.
  3. Crack the eggs into the well and add salt and olive oil. Beat the eggs with a fork, incorporating flour gradually.
  4. Knead the dough by hand for 8-10 minutes until smooth and elastic.
  5. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
  6. Divide the dough into four equal pieces and cover with a damp cloth.
  7. Flatten one piece slightly and dust the work surface with flour.
  8. Roll out the dough using a rolling pin or pasta machine to your desired thickness.
  9. Slice the rolled-out dough into your preferred pasta shape.
  10. Dust cut pasta with flour and set aside.
  11. Boil a large pot of salted water and cook the fresh pasta for 2-4 minutes.
  12. Drain the pasta, reserving some cooking water, and combine with your favorite sauce.
  13. Serve immediately.
