Description

Ingredients

  • 1 cup fine bulgur wheat
  • 2 cups fresh parsley, finely chopped
  • 1/2 cup fresh mint, finely chopped
  • 4 ripe tomatoes, diced
  • 2 scallions, finely chopped
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt to taste


Instructions

  1. Soak the bulgur wheat in warm water for 10-15 minutes until softened.
  2. Drain any excess water from the bulgur and place it in a large bowl.
  3. Add the chopped parsley, mint, tomatoes, and scallions to the bulgur.
  4. In a small bowl, whisk together the olive oil, lemon juice, and salt.
  5. Pour the dressing over the salad and mix well.
  6. Let the salad marinate for at least 30 minutes before serving to allow flavors to meld.
