Ingredients
- 4 medium zucchinis
- 1 pound chicken breast, cubed
- 4 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh Parmesan cheese (for serving)
- Fresh herbs (basil or parsley, for garnish)
Instructions
- Spiralize the zucchinis into noodles using a spiralizer or vegetable peeler.
- In a large skillet, heat butter and olive oil over medium-high heat.
- Add cubed chicken to the skillet and sauté until golden brown.
- Stir in minced garlic and cook until fragrant.
- Add lemon juice and mix well.
- Toss in zucchini noodles and sauté for another 1-2 minutes until tender but still crunchy.
- Season with salt and pepper, then serve topped with grated Parmesan cheese and fresh herbs.
Notes
Add a splash of broth when reheating to keep zucchini noodles tender. Adjust garlic levels for personal preference.
