Description

A nourishing and flavorful dish combining succulent chicken and vibrant zucchini noodles, enhanced with garlic.


Ingredients

  • 4 medium zucchinis
  • 1 pound chicken breast, cubed
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh Parmesan cheese (for serving)
  • Fresh herbs (basil or parsley, for garnish)


Instructions

  1. Spiralize the zucchinis into noodles using a spiralizer or vegetable peeler.
  2. In a large skillet, heat butter and olive oil over medium-high heat.
  3. Add cubed chicken to the skillet and sauté until golden brown.
  4. Stir in minced garlic and cook until fragrant.
  5. Add lemon juice and mix well.
  6. Toss in zucchini noodles and sauté for another 1-2 minutes until tender but still crunchy.
  7. Season with salt and pepper, then serve topped with grated Parmesan cheese and fresh herbs.

Notes

Add a splash of broth when reheating to keep zucchini noodles tender. Adjust garlic levels for personal preference.
