Ingredients
- 8 oz penne pasta
- 1 lb chicken breast, diced
- 2 tbsp olive oil
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 350°F (175°C).
- Boil pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté diced chicken until golden and cooked through.
- Add minced garlic and cook for an additional minute until fragrant.
- In a bowl, combine the sautéed chicken with cooked pasta and heavy cream. Stir in half of the Parmesan cheese and season with salt and pepper.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Top with the remaining Parmesan cheese.
- Bake for 30 minutes or until heated through and golden on top.
- Let it rest for 5-10 minutes before serving. Garnish with fresh parsley.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Can freeze portions for up to 3 months.
