Ingredients
- 2 pounds Sweet Potatoes, peeled and cubed
 - 4-5 cloves Garlic, minced
 - ¾ cup Parmesan Cheese, freshly grated
 - 3 tablespoons Olive Oil, extra virgin
 - 1 teaspoon Salt
 - ½ teaspoon Black Pepper
 - 2 tablespoons Fresh Parsley, chopped (optional for garnish)
 
Instructions
- Preheat your oven to 425°F (220°C).
 - Wash and peel the sweet potatoes, then cut them into even cubes, approximately 1-inch in size.
 - In a large mixing bowl, add the cubed sweet potatoes and drizzle with olive oil. Toss until evenly coated.
 - Sprinkle with salt and pepper, add minced garlic, and toss again to distribute the seasonings.
 - Sprinkle Parmesan cheese over the sweet potatoes and toss gently to ensure adherence.
 - Line a baking sheet with parchment paper and spread the sweet potato mixture in a single layer.
 - Roast in the oven for about 25-30 minutes, stirring halfway through, until golden-brown and fork-tender.
 - Remove from the oven and garnish with chopped parsley if desired. Serve immediately.
 
Notes
For even cooking, cut sweet potatoes into uniform pieces. Don’t overcrowd the baking sheet; use two sheets if necessary.
