Description

Garlic Parmesan Sweet Potatoes combine the sweetness of potatoes with savory garlic and rich Parmesan cheese, making them a delightful side dish perfect for any meal.


Ingredients

  • 2 pounds Sweet Potatoes, peeled and cubed
  • 4-5 cloves Garlic, minced
  • ¾ cup Parmesan Cheese, freshly grated
  • 3 tablespoons Olive Oil, extra virgin
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 tablespoons Fresh Parsley, chopped (optional for garnish)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then cut them into even cubes, approximately 1-inch in size.
  3. In a large mixing bowl, add the cubed sweet potatoes and drizzle with olive oil. Toss until evenly coated.
  4. Sprinkle with salt and pepper, add minced garlic, and toss again to distribute the seasonings.
  5. Sprinkle Parmesan cheese over the sweet potatoes and toss gently to ensure adherence.
  6. Line a baking sheet with parchment paper and spread the sweet potato mixture in a single layer.
  7. Roast in the oven for about 25-30 minutes, stirring halfway through, until golden-brown and fork-tender.
  8. Remove from the oven and garnish with chopped parsley if desired. Serve immediately.

Notes

For even cooking, cut sweet potatoes into uniform pieces. Don’t overcrowd the baking sheet; use two sheets if necessary.
