Crispy on the outside and fluffy on the inside, these garlic roast potatoes are bursting with flavor—an absolute staple for any meal.
Ingredients
- 2 lbs Yukon Gold potatoes, washed and cut into chunks
- 3 tablespoons olive oil
- 4 cloves minced garlic
- 2 teaspoons fresh rosemary
- 2 teaspoons fresh thyme
- Salt and pepper to taste
- 1 tablespoon cornstarch (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and cut the Yukon Gold potatoes into even chunks.
- In a large bowl, toss the potatoes with olive oil, minced garlic, fresh herbs, salt, and pepper.
- If desired, dust the potatoes with cornstarch for extra crunch.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 40 minutes, turning halfway through, until golden and crispy.
Notes
For a cheesy twist, sprinkle grated cheese on top during the last 5 minutes of roasting. Store leftovers in an airtight container for up to 3 days.
