Description

Crispy on the outside and fluffy on the inside, these garlic roast potatoes are bursting with flavor—an absolute staple for any meal.


Ingredients

  • 2 lbs Yukon Gold potatoes, washed and cut into chunks
  • 3 tablespoons olive oil
  • 4 cloves minced garlic
  • 2 teaspoons fresh rosemary
  • 2 teaspoons fresh thyme
  • Salt and pepper to taste
  • 1 tablespoon cornstarch (optional)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the Yukon Gold potatoes into even chunks.
  3. In a large bowl, toss the potatoes with olive oil, minced garlic, fresh herbs, salt, and pepper.
  4. If desired, dust the potatoes with cornstarch for extra crunch.
  5. Spread the potatoes in a single layer on a baking sheet.
  6. Roast in the preheated oven for 40 minutes, turning halfway through, until golden and crispy.

Notes

For a cheesy twist, sprinkle grated cheese on top during the last 5 minutes of roasting. Store leftovers in an airtight container for up to 3 days.
