Description

Spicy gingerbread cookies wrapped around a creamy cheesecake center, perfect for holiday gatherings.


Ingredients

  • 1/2 cup (115 g) unsalted butter
  • 3/4 cup (150 g) brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 2 cups (250 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 8 oz (225 g) cream cheese
  • 1/4 cup (30 g) powdered sugar
  • 1 large egg (for filling)
  • 1/2 tsp vanilla


Instructions

  1. Cream the butter and brown sugar together in a bowl.
  2. Add the egg and molasses, mixing until well combined.
  3. In a separate bowl, mix the dry ingredients (flour, baking soda, salt, ginger, cinnamon, and cloves).
  4. Gradually mix the dry ingredients into the wet ingredients to form a dough.
  5. Chill the dough for 30–60 minutes.
  6. For the filling, beat together the cream cheese, powdered sugar, egg, and vanilla until smooth; chill for 15–30 minutes.
  7. Scoop 1 tablespoon of dough, flatten it, place 1 teaspoon of chilled filling in the center, wrap the dough around it, and roll into a ball.
  8. Preheat the oven to 350°F (175°C) and bake on a parchment-lined sheet for 10–12 minutes.
  9. Cool for 5 minutes on the pan before transferring to a rack.

Notes

Chill dough and filling properly to prevent leaking and ensure a soft bite.
