Ingredients
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup molasses
- 1 large egg
- 8 oz cream cheese, softened
- ½ cup sugar (for filling)
- 1 tsp vanilla extract
- 1 large egg (for filling)
Instructions
- Mix together flour, baking soda, ginger, cinnamon, nutmeg, and salt in a bowl.
- Cream butter and brown sugar in a separate bowl. Add molasses and 1 egg, mixing until smooth.
- Gradually add dry ingredients to the wet mixture until a dough forms.
- In another bowl, beat cream cheese, ½ cup sugar, vanilla, and egg until smooth to create the filling.
- Scoop a portion of gingerbread dough, flatten it, and add a dollop of cheesecake filling in the center. Encapsulate and shape into balls.
- Bake cookies at 350°F (175°C) for 12-15 minutes or until slightly golden.
Notes
Chill the dough for at least 30 minutes before baking for better handling. Ensure ingredients are at room temperature for the filling.
