Description

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup molasses
  • 1 large egg
  • 8 oz cream cheese, softened
  • ½ cup sugar (for filling)
  • 1 tsp vanilla extract
  • 1 large egg (for filling)


Instructions

  1. Mix together flour, baking soda, ginger, cinnamon, nutmeg, and salt in a bowl.
  2. Cream butter and brown sugar in a separate bowl. Add molasses and 1 egg, mixing until smooth.
  3. Gradually add dry ingredients to the wet mixture until a dough forms.
  4. In another bowl, beat cream cheese, ½ cup sugar, vanilla, and egg until smooth to create the filling.
  5. Scoop a portion of gingerbread dough, flatten it, and add a dollop of cheesecake filling in the center. Encapsulate and shape into balls.
  6. Bake cookies at 350°F (175°C) for 12-15 minutes or until slightly golden.

Notes

Chill the dough for at least 30 minutes before baking for better handling. Ensure ingredients are at room temperature for the filling.
