Description

A delightful dish that combines creamy brie cheese with sweet caramelized apples and fresh thyme, perfect for gatherings or cozy nights in.


Ingredients

  • 2 tablespoons Unsalted Butter (or coconut oil for dairy-free)
  • 2 cups Red Apple, diced (or Granny Smith for a tangy twist)
  • 1 tablespoon Chopped Fresh Thyme (plus extra for garnish)
  • 1 tablespoon Honey (or maple syrup for a vegan alternative)
  • 2 tablespoons Brown Sugar (or coconut sugar for a healthier option)
  • 1 tablespoon Lemon Juice (or vinegar for a similar tang)
  • 0.5 teaspoon Cinnamon (omit for a more neutral flavor)
  • 0.25 teaspoon Nutmeg (leave out if preferred)
  • 0.25 teaspoon Kosher Salt (or sea salt)
  • 1 round Brie (or Camembert as a substitute)
  • 1 sheet Puff Pastry (store-bought or homemade)
  • 1 egg Egg Wash (omit for a vegan-friendly version)
  • 0.25 cup Chopped Walnuts (or pecans or almonds)
  • to taste Flaky Salt (or regular salt)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a pan, melt the butter over medium heat.
  3. Add the diced apples, thyme, honey, brown sugar, lemon juice, cinnamon, nutmeg, and salt. Cook until the apples are soft and caramelized, about 10 minutes.
  4. Roll out the puff pastry on a floured surface. Place the brie in the center of the puff pastry.
  5. Spoon the caramelized apples over the brie. Add chopped walnuts on top.
  6. Fold the puff pastry around the brie, sealing it well. Brush with egg wash if using.
  7. Bake in the preheated oven for 20-25 minutes or until golden brown.
  8. Let it cool for a few minutes before serving.

Notes

Serve warm with crusty bread, crackers, or sliced apples. Drizzle honey and sprinkle flaky salt for extra flavor. Store leftovers in the refrigerator for up to 3 days.
