Ingredients
- 4 chicken thighs
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 garlic cloves, minced
- 1 tablespoon dried oregano
- Salt and pepper, to taste
- 1 bell pepper, sliced
- 1 red onion, sliced
- 1 zucchini, sliced
- 2 cups quinoa or brown rice, cooked
- 1 cup tzatziki
- Feta cheese, crumbled (optional)
- Grilled pita bread (for serving)
Instructions
- Marinate the chicken thighs in a mixture of olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 30 minutes.
- Heat a skillet over medium-high heat and cook the marinated chicken until golden brown and cooked through.
- Add sliced bell pepper, red onion, and zucchini to the skillet, cooking until slightly crisp and vibrant.
- Assemble the bowls by placing cooked quinoa or brown rice at the base, followed by sliced chicken and vegetables.
- Top with tzatziki and sprinkle with crumbled feta cheese, if desired.
