Description

A bright, savory-sweet twist on a weeknight favorite, featuring tender lemony chicken skewers with a sticky maple-Dijon glaze.


Ingredients

  • 1.5 lbs (700 g) boneless chicken thighs or breasts, cut into 1-inch pieces
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 3 minced garlic cloves
  • 1 tbsp dried oregano (or 1.5 tbsp fresh)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • Pinch of smoked paprika


Instructions

  1. Marinate chicken pieces in olive oil, lemon juice, garlic, oregano, salt, and pepper for 30–60 minutes.
  2. Thread marinated chicken onto skewers.
  3. Heat grill or skillet to medium-high (about 400–450°F).
  4. Cook skewers for 8–10 minutes, turning once.
  5. In the last 2 minutes, brush chicken with glaze made from maple syrup, Dijon mustard, olive oil, lemon juice, and smoked paprika.
  6. Cook until glaze is tacky and chicken reaches 165°F (74°C).

Notes

Use a thermometer to ensure chicken is cooked through at 165°F. You can substitute the chicken with halloumi or tofu for a vegetarian option.
