Description

These Greek-style fries are crispy on the outside and fluffy on the inside, topped with tangy feta and fresh herbs for a delicious side dish.


Ingredients

  • 2 pounds russet or Yukon Gold potatoes
  • 2–3 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 ounces crumbled feta
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped oregano
  • Juice of 1 lemon


Instructions

  1. Cut potatoes into 1/2-inch fries and soak in cold water for 30 minutes.
  2. Drain and dry the potatoes thoroughly.
  3. Toss with olive oil, cornstarch, kosher salt, and black pepper.
  4. Spread in a single layer on a lightly oiled baking sheet.
  5. Roast at 425°F for 25–35 minutes, flipping once, until golden and crisp.
  6. In the last 2–4 minutes of roasting, sprinkle with crumbled feta, parsley, oregano, and lemon juice.
  7. Return to oven just to warm the cheese before serving.

Notes

Soak potatoes to reduce starch for crispiness. Best served hot and can be paired with various dipping sauces.
