Ingredients
- 1 pound fresh green beans, trimmed
- 3 tablespoons unsalted butter
- 1/3 cup chopped toasted pecans
- 2 tablespoons honey
- 1/3 cup dried cranberries
- 1 teaspoon lemon zest
- Salt, to taste
Instructions
- Blanch the green beans in boiling salted water for 3-4 minutes until crisp-tender, then shock in ice water to stop cooking.
- In a skillet over medium heat, melt the butter.
- Add the chopped toasted pecans and honey, stirring until glossy and fragrant.
- Add a pinch of salt, dried cranberries, and drained green beans, tossing to coat and warming through.
- Finish with lemon zest and a squeeze of lemon juice, then serve immediately.
Notes
For best texture, serve immediately. If your dried cranberries are very sweet, reduce honey and add a splash of apple cider vinegar.
