Description

Delightful Mexican enchiladas filled with tender chicken, zesty green sauce, and cheesy goodness.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup green enchilada sauce
  • 8 corn tortillas
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix shredded chicken, Monterey Jack cheese, sharp cheddar cheese, cilantro, lime juice, cumin, garlic powder, salt, and pepper.
  3. Warm the tortillas in the microwave for 15-20 seconds to make them pliable.
  4. Spread a few tablespoons of the chicken mixture onto each tortilla and roll tightly.
  5. Place the rolled tortillas in a baking dish and cover them with green enchilada sauce.
  6. Sprinkle additional cheese on top.
  7. Bake for 20-25 minutes until bubbly and golden.
  8. Serve hot, garnished with extra cilantro and lime juice.

Notes

For added flavor, consider using homemade green sauce made from fresh tomatillos and jalapeños.
