Ingredients
- 2 cups shredded cooked chicken
- 1 cup Monterey Jack cheese, shredded
- 1 cup sharp cheddar cheese, shredded
- 1 cup green enchilada sauce
- 8 corn tortillas
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix shredded chicken, Monterey Jack cheese, sharp cheddar cheese, cilantro, lime juice, cumin, garlic powder, salt, and pepper.
- Warm the tortillas in the microwave for 15-20 seconds to make them pliable.
- Spread a few tablespoons of the chicken mixture onto each tortilla and roll tightly.
- Place the rolled tortillas in a baking dish and cover them with green enchilada sauce.
- Sprinkle additional cheese on top.
- Bake for 20-25 minutes until bubbly and golden.
- Serve hot, garnished with extra cilantro and lime juice.
Notes
For added flavor, consider using homemade green sauce made from fresh tomatillos and jalapeños.
