Ingredients

  • 4 tablespoons Kosher Salt
  • 1 quart Water
  • 5 cloves Garlic (smashed; fresh minced garlic can be used)
  • 1 tablespoon Fresh Peppercorns (black pepper can substitute)
  • 1 teaspoon Honey (maple syrup can be a vegan alternative)
  • 3 tablespoons Cajun Seasoning Blend
  • 1 cup Mayonnaise (vegan mayo for dairy-free)
  • 1/4 cup Apple Cider Vinegar (white vinegar as substitute)
  • 1 tablespoon Brown Mustard (spicy brown recommended)
  • 1 tablespoon Brown Sugar (coconut sugar works as a substitute)
  • 2 teaspoons Prepared Horseradish (fresh grated for better flavor)
  • 1 teaspoon Lemon Juice
  • 1/2 teaspoon Worcestershire Sauce (omit for gluten-free)
  • 1/2 teaspoon Hot Sauce (adjust to taste)
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder

Instructions

  1. Brine the Chicken Wings: In a large bowl, mix salt and water until dissolved. Add smashed garlic and peppercorns. Submerge the wings in the brine for at least 30 minutes, up to 2 hours.
  2. Prepare the Grill: Preheat your grill to medium-high heat and oil it to prevent sticking.
  3. Season the Wings: Remove wings from brine, pat dry, and rub with Cajun seasoning.
  4. Grill the Wings: Grill wings for 20-25 minutes, turning occasionally until crispy and cooked through.
  5. Make the Alabama White Sauce: Mix mayonnaise, apple cider vinegar, brown mustard, brown sugar, horseradish, lemon juice, Worcestershire sauce, hot sauce, garlic powder, onion powder, cayenne, salt, and pepper until smooth.
  6. Serve: Serve wings hot with Alabama white sauce drizzled or on the side for dipping.
