Description
Delicious zucchini boats filled with grilled corn, vegan cheese, and spices, perfect for summer cookouts.
Ingredients
- 2 medium Zucchini
- 1 tablespoon Vegetable Oil
- to taste Salt
- to taste Pepper
- 1 cup Corn
- 1/2 cup Vegan Parmesan Cheese
- 1/4 cup Vegan Sour Cream
- to taste Hot Sauce
- 1 teaspoon Paprika
- 2 tablespoons Fresh Parsley
Instructions
- Preheat your grill to medium heat.
- Cut the zucchinis in half lengthwise and scoop out some of the flesh.
- Brush zucchini halves with vegetable oil and sprinkle salt and pepper inside.
- In a bowl, mix corn, vegan Parmesan cheese, vegan sour cream, hot sauce, and paprika. Adjust seasoning with salt and pepper.
- Fill each zucchini half with the corn mixture and pack it well.
- Place the stuffed zucchini on the grill and cook for about 10-15 minutes, until tender.
- Remove from grill, sprinkle with fresh parsley, and serve.
Notes
These zucchini boats can be enjoyed as a side dish or a light main course. Store leftovers in an airtight container for 2-3 days.
