Description

Delicious zucchini boats filled with grilled corn, vegan cheese, and spices, perfect for summer cookouts.


Ingredients

  • 2 medium Zucchini
  • 1 tablespoon Vegetable Oil
  • to taste Salt
  • to taste Pepper
  • 1 cup Corn
  • 1/2 cup Vegan Parmesan Cheese
  • 1/4 cup Vegan Sour Cream
  • to taste Hot Sauce
  • 1 teaspoon Paprika
  • 2 tablespoons Fresh Parsley


Instructions

  1. Preheat your grill to medium heat.
  2. Cut the zucchinis in half lengthwise and scoop out some of the flesh.
  3. Brush zucchini halves with vegetable oil and sprinkle salt and pepper inside.
  4. In a bowl, mix corn, vegan Parmesan cheese, vegan sour cream, hot sauce, and paprika. Adjust seasoning with salt and pepper.
  5. Fill each zucchini half with the corn mixture and pack it well.
  6. Place the stuffed zucchini on the grill and cook for about 10-15 minutes, until tender.
  7. Remove from grill, sprinkle with fresh parsley, and serve.

Notes

These zucchini boats can be enjoyed as a side dish or a light main course. Store leftovers in an airtight container for 2-3 days.
