Description

A vibrant and refreshing salsa featuring smoky grilled shrimp, creamy avocado, and crunchy corn, perfect for summer gatherings.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup fresh corn kernels
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste


Instructions

  1. In a bowl, combine shrimp, olive oil, lime juice, salt, and pepper. Marinate for 15-20 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill shrimp for about 2-3 minutes on each side until pink and opaque.
  4. In a large bowl, combine grilled shrimp, avocado, corn, red onion, and cilantro.
  5. Mix gently and serve immediately or refrigerate until ready to serve.

Notes

For a spicy kick, add diced jalapeños. To prevent avocado from browning, add lime juice.
