Ingredients
- 1 pound shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup fresh corn kernels
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
- In a bowl, combine shrimp, olive oil, lime juice, salt, and pepper. Marinate for 15-20 minutes.
- Preheat the grill to medium-high heat.
- Grill shrimp for about 2-3 minutes on each side until pink and opaque.
- In a large bowl, combine grilled shrimp, avocado, corn, red onion, and cilantro.
- Mix gently and serve immediately or refrigerate until ready to serve.
Notes
For a spicy kick, add diced jalapeños. To prevent avocado from browning, add lime juice.
