Description

Bright, sticky, and spicy grilled chicken with a sweet-tart honey-lime glaze, perfect for weeknight dinners.


Ingredients

  • 1/4 cup honey
  • 3 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 2 minced garlic cloves
  • 1–2 tsp red pepper flakes or 1 tbsp sriracha
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 boneless skinless chicken thighs (about 1.5 lb) or breasts


Instructions

  1. Whisk together honey, lime juice, olive oil, garlic, red pepper flakes, cumin, salt, and black pepper to create the marinade.
  2. Marinate the chicken in a resealable bag for 30 minutes to 4 hours.
  3. Preheat grill to medium-high (about 400–450°F) and oil the grates.
  4. Grill chicken for 6–8 minutes per side for thighs or 5–7 minutes per side for breasts, until cooked to an internal temperature of 165°F.
  5. Reserve a few tablespoons of marinade before adding chicken; baste during the last minute of cooking.
  6. Let the chicken rest for 5 minutes before slicing.

Notes

For added flavor, garnish with lime wedges, cilantro, and scallions. Serve over rice or in a salad.
