Description
These grilled skewers are marinated in creamy coconut milk and zesty lime, perfect for gatherings and bursting with flavor.
Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup full-fat coconut milk
- 2 cloves garlic, minced
- 2 tablespoons lime juice
- 1 tablespoon honey
- Salt and pepper to taste
- Cilantro for garnish
- Lime wedges for serving
Instructions
- In a bowl, mix coconut milk, garlic, lime juice, honey, salt, and pepper to create the marinade.
- Add chicken pieces and coat well; marinate for at least 1 hour, preferably overnight.
- Soak wooden skewers in water for 30 minutes if using.
- Preheat the grill to medium heat.
- Thread marinated chicken onto skewers.
- Cook skewers on the grill, turning occasionally, until chicken reaches 165°F (75°C) internally.
- Serve garnished with cilantro and lime wedges.
Notes
For a spicy kick, add red chili flakes to the marinade. Enjoy with a side of cucumber salad or jasmine rice.
