Description

These grilled skewers are marinated in creamy coconut milk and zesty lime, perfect for gatherings and bursting with flavor.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup full-fat coconut milk
  • 2 cloves garlic, minced
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Cilantro for garnish
  • Lime wedges for serving


Instructions

  1. In a bowl, mix coconut milk, garlic, lime juice, honey, salt, and pepper to create the marinade.
  2. Add chicken pieces and coat well; marinate for at least 1 hour, preferably overnight.
  3. Soak wooden skewers in water for 30 minutes if using.
  4. Preheat the grill to medium heat.
  5. Thread marinated chicken onto skewers.
  6. Cook skewers on the grill, turning occasionally, until chicken reaches 165°F (75°C) internally.
  7. Serve garnished with cilantro and lime wedges.

Notes

For a spicy kick, add red chili flakes to the marinade. Enjoy with a side of cucumber salad or jasmine rice.
