Description

A refreshing summer dish with smoky grilled watermelon and a rich balsamic glaze, perfect as a starter or light dessert.


Ingredients

  • 1 small seedless watermelon (approx. 4.5–5.5 kg), thoroughly washed
  • 60 ml extra virgin olive oil
  • 30 ml balsamic vinegar
  • 15 ml honey or maple syrup
  • 5 ml freshly squeezed lime juice
  • 2.5 ml fine sea salt
  • 1.25 ml freshly ground black pepper
  • Crumbled feta cheese
  • Fresh mint leaves
  • Fresh basil leaves
  • Chili flakes
  • Balsamic glaze


Instructions

  1. Cut off both ends of the watermelon and stand it upright. Trim away the rind vertically, then slice it into rounds 2.5 cm thick.
  2. Blot each slice with paper towels to remove excess moisture.
  3. In a bowl, combine olive oil, balsamic vinegar, honey or maple syrup, lime juice, sea salt, and black pepper. Whisk until smooth and fully mixed. Adjust the seasoning to taste.
  4. Preheat the grill to medium-high (190–230°C). Clean and lightly oil the grates to prevent sticking.
  5. Brush both sides of each watermelon slice evenly with the prepared balsamic glaze.
  6. Place the watermelon slices directly on the hot grill. Cook for 2–3 minutes on each side until grill marks develop and the flesh slightly softens. Move slices to cooler areas on the grill if flare-ups occur.
  7. Transfer the grilled slices to a clean serving platter. While still warm, top with crumbled feta, mint, basil, chili flakes, or extra balsamic glaze as desired.
  8. Serve immediately as a starter, side, or refreshing dessert option.

Notes

Best enjoyed fresh off the grill. Store leftovers in an airtight container in the fridge for 2-3 days, though texture may change.
