A delightful Hawaiian dish featuring juicy chicken marinated in a sweet and tangy sauce, grilled to perfection.
Ingredients
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, finely chopped
- 2 tablespoons packed brown sugar
- 1/4 cup soy sauce
- 1/2 cup pineapple juice
- 1 cup teriyaki sauce
- 1 ripe pineapple, cut into circles
- 4 pieces boneless, skinless chicken thighs or breasts
- Chopped green onions
- Toasted sesame seeds
Instructions
- Combine teriyaki sauce, pineapple juice, soy sauce, brown sugar, garlic, ginger, and sesame oil in a bowl and mix well.
- Marinate the chicken in the mixture in a dish or zip bag, sealing it and chilling for at least 2 hours or overnight.
- Preheat the grill to medium-high heat.
- Remove chicken from marinade, reserving the marinade for basting. Grill chicken for 6-7 minutes on each side, basting with reserved marinade, until cooked through (internal temp reaches 165°F).
- Grill pineapple rings for 2-3 minutes on each side until charred.
- Dispose of any leftover marinade that has touched raw chicken. Serve grilled chicken topped with grilled pineapple, and garnish with chopped green onions and sesame seeds.
Notes
For best flavor, marinate chicken overnight. Ensure the grill is hot before cooking for better grill marks.
