Description

A lighter version of the classic pumpkin spice latte, made with simple ingredients for a cozy fall beverage.


Ingredients

  • 2 tablespoons pumpkin purée
  • 1 cup unsweetened almond milk
  • 1/2 cup strong brewed coffee or espresso
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon maple syrup


Instructions

  1. Add pumpkin purée, unsweetened almond milk, ground cinnamon, and maple syrup to a small saucepan.
  2. Place the saucepan over medium heat. Whisk frequently until the mixture is hot but not boiling, about 3–5 minutes.
  3. Remove from heat. Whisk or froth until foamy.
  4. Pour the foamed mixture over the brewed coffee or espresso in a mug and gently stir.
  5. Top with dairy-free whipped cream and sprinkle with nutmeg, if desired.

Notes

For a creamier texture, froth the almond milk mixture longer. Adjust sweetness with more or less maple syrup.
