Description
A creamy and nutritious soup featuring fresh broccoli and cheddar cheese, perfect for a comforting meal.
Ingredients
- 4 cups Broccoli florets (Fresh, cut into small pieces)
 - 1 medium Onion (Finely chopped)
 - 2 cloves Garlic (Minced)
 - 4 cups Vegetable broth (Low-sodium)
 - 1.5 cups Cheddar cheese (Shredded sharp cheddar)
 - 1 cup Milk (Whole or dairy alternative)
 - 2 tablespoons Olive oil (For sautéing)
 - to taste Salt
 - to taste Pepper
 
Instructions
- Wash and trim the broccoli, cutting it into small florets.
 - In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
 - Add minced garlic and stir for about 30 seconds, being careful not to burn it.
 - Add broccoli florets and chopped stems, stirring well. Cook for an additional 3-4 minutes.
 - Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 10-15 minutes until broccoli is tender.
 - Remove from heat and blend the soup until smooth using an immersion blender.
 - Return to low heat and stir in milk, mixing well.
 - Gradually add shredded cheddar cheese, stirring until melted.
 - Season with salt and pepper to taste, adjusting consistency with more broth or milk if needed.
 - Serve hot, garnished with additional cheese or black pepper if desired.
