Description

A moist, lightly sweet banana bread using applesauce instead of oil to keep the calories low, perfect for snacks or breakfast.


Ingredients

  • 3 medium very ripe bananas (about 1 1/2 cups, mashed)
  • 1/3 cup unsweetened applesauce
  • 2 large eggs (or 1 egg + 1 egg white)
  • 1/4 cup plain nonfat Greek yogurt
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 cup whole wheat pastry flour
  • 1/2 cup oat flour (or whole wheat flour total 1 1/2 cups)
  • 1 tsp baking soda
  • 1/2 tsp salt


Instructions

  1. Mash the ripe bananas in a bowl until smooth (about 1 1/2 cups).
  2. In another bowl, whisk together applesauce, eggs, yogurt, maple syrup (or honey), and vanilla extract until combined.
  3. Stir in the mashed bananas into the wet mixture.
  4. In a separate bowl, combine whole wheat pastry flour, oat flour, baking soda, and salt.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into a greased 9×5-inch loaf pan.
  7. Bake at 350°F (175°C) for 45–55 minutes, or until a skewer comes out clean.

Notes

Use very ripe bananas for natural sweetness. Measure flour carefully to avoid a dense loaf.
