Description

A beautifully roasted pumpkin filled with earthy flavors and wholesome ingredients, perfect for autumn gatherings.


Ingredients

  • 1 sugar pumpkin
  • 2 cups cooked brown rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Halve the sugar pumpkin and scoop out the seeds.
  3. In a pan, heat olive oil over medium heat, add onions and garlic, and sauté until translucent.
  4. Stir in cooked brown rice, sage, thyme, salt, and pepper until well combined.
  5. Pack the rice mixture into the hollowed pumpkin halves.
  6. Place the stuffed pumpkins in a baking dish and cover with foil.
  7. Bake in the preheated oven for about 45 minutes, or until the pumpkin is tender.
  8. Remove from the oven, garnish with fresh herbs, slice, and serve warm.

Notes

Choose sugar pumpkins for best results; they’re sweeter and easier to handle. You can store leftovers in an airtight container for up to 3 days.
