Ingredients
- 1 sugar pumpkin
- 2 cups cooked brown rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Halve the sugar pumpkin and scoop out the seeds.
- In a pan, heat olive oil over medium heat, add onions and garlic, and sauté until translucent.
- Stir in cooked brown rice, sage, thyme, salt, and pepper until well combined.
- Pack the rice mixture into the hollowed pumpkin halves.
- Place the stuffed pumpkins in a baking dish and cover with foil.
- Bake in the preheated oven for about 45 minutes, or until the pumpkin is tender.
- Remove from the oven, garnish with fresh herbs, slice, and serve warm.
Notes
Choose sugar pumpkins for best results; they’re sweeter and easier to handle. You can store leftovers in an airtight container for up to 3 days.
