Description

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups diced potatoes
  • 12 ounces andouille sausage, sliced
  • 4 cups chicken stock
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions, bell peppers, and garlic until fragrant.
  2. Add diced potatoes and sliced andouille sausage, stirring to combine.
  3. Pour in chicken stock and add Cajun seasoning. Stir well.
  4. Bring to a simmer and cook until potatoes are tender, about 20 minutes.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Serve hot, garnished with chopped green onions and parsley.

Notes

For a creamier texture, use an immersion blender to purée part of the soup.
