Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 4 cups diced potatoes
- 12 ounces andouille sausage, sliced
- 4 cups chicken stock
- 1 cup heavy cream
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- Chopped green onions for garnish
- Parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onions, bell peppers, and garlic until fragrant.
- Add diced potatoes and sliced andouille sausage, stirring to combine.
- Pour in chicken stock and add Cajun seasoning. Stir well.
- Bring to a simmer and cook until potatoes are tender, about 20 minutes.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions and parsley.
Notes
For a creamier texture, use an immersion blender to purée part of the soup.
