Description

A warm and nourishing chicken minestrone soup packed with wholesome ingredients and rich flavors, perfect for family dinners or meal prep.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 pound chicken breast, cubed
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 zucchini, diced
  • 2 cups spinach
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving


Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions, garlic, and carrots until softened.
  2. Add chicken breast to the pot and brown slightly.
  3. Stir in diced tomatoes and chicken broth. Bring to a simmer.
  4. Add zucchini and spinach, and season with thyme, bay leaves, salt, and pepper.
  5. Simmer for 25-30 minutes to allow flavors to meld.
  6. Remove bay leaves, adjust seasoning, and serve warm, garnished with Parmesan cheese.

Notes

For a spicier version, add red pepper flakes. Store leftovers in airtight containers.
