Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 pound chicken breast, cubed
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 zucchini, diced
- 2 cups spinach
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onions, garlic, and carrots until softened.
- Add chicken breast to the pot and brown slightly.
- Stir in diced tomatoes and chicken broth. Bring to a simmer.
- Add zucchini and spinach, and season with thyme, bay leaves, salt, and pepper.
- Simmer for 25-30 minutes to allow flavors to meld.
- Remove bay leaves, adjust seasoning, and serve warm, garnished with Parmesan cheese.
Notes
For a spicier version, add red pepper flakes. Store leftovers in airtight containers.
