Description

A comforting and flavorful stew with tender beef and fresh vegetables, perfect for cozy nights.

Ingredients

  • 1 lb ground beef (80/20 fat content)
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 can (15 oz) diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1 tablespoon cornstarch (optional for thickening)
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, brown the ground beef over medium-high heat until fully cooked. Drain excess fat.
  2. Add onion, carrots, potatoes, and celery to the pot. Cook for 5-7 minutes until vegetables begin to soften.
  3. Stir in beef broth, diced tomatoes, Worcestershire sauce, thyme, parsley, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 45 minutes, stirring occasionally.
  5. If you’d like a thicker stew, mix cornstarch with cold water, and stir it in during the last 10 minutes of cooking.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

Pair the stew with crusty bread or serve over mashed potatoes for an ultimate comfort meal.
