Ingredients
- 1 lb ground beef (80/20 fat content)
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, diced
- 2 celery stalks, diced
- 4 cups beef broth
- 1 can (15 oz) diced tomatoes
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1 tablespoon cornstarch (optional for thickening)
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, brown the ground beef over medium-high heat until fully cooked. Drain excess fat.
- Add onion, carrots, potatoes, and celery to the pot. Cook for 5-7 minutes until vegetables begin to soften.
- Stir in beef broth, diced tomatoes, Worcestershire sauce, thyme, parsley, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 45 minutes, stirring occasionally.
- If you’d like a thicker stew, mix cornstarch with cold water, and stir it in during the last 10 minutes of cooking.
- Serve hot, garnished with fresh herbs if desired.
