Ingredients
- 1 pound ground beef
- 2 potatoes, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, chopped
- 4 cups beef broth
- 1 can diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the ground beef and cook until browned.
- Add the onion, carrots, and celery, and cook for about 5 minutes until softened.
- Stir in the potatoes, diced tomatoes, beef broth, garlic powder, and oregano.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until the potatoes are tender.
