Description

A comforting and hearty beef chili made easily in the Instant Pot, perfect for chilly days and gatherings.


Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup diced bell peppers (any color)
  • 1 (15 oz) can kidney or black beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 cup beef broth (low sodium recommended)
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp cooking oil (for sautéing)


Instructions

  1. Set your Instant Pot to the sauté function. Add 2 tablespoons of oil and heat it up.
  2. Cook the diced onions and minced garlic until softened and fragrant, about 2-3 minutes.
  3. Add the ground beef and cook until browned, breaking it apart with a wooden spoon.
  4. Sprinkle in chili powder, cumin, salt, and pepper. Stir well to coat the beef with the spices.
  5. Add diced bell peppers and cook for another 2 minutes to soften them slightly.
  6. Pour in the tomato sauce, diced tomatoes, and beef broth. Stir to mix everything evenly.
  7. Add the drained and rinsed beans, and stir again.
  8. Close the Instant Pot lid securely and set the valve to sealing. Select manual or pressure cook mode and set the timer for 15 minutes on high pressure.
  9. After cooking, let the pressure release naturally for 10 minutes, then safely perform a quick release.
  10. Taste the chili and adjust the seasoning if necessary. Serve hot with your favorite garnishes.

Notes

Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat before serving.
