Description

A delightful twist on classic carrot cake with a creamy cheese filling, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups grated carrots
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: chopped walnuts or pecans for garnish


Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, mix sugar, brown sugar, oil, and eggs until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mix just until combined.
  5. Fold in the grated carrots.
  6. In a bowl, combine cream cheese, powdered sugar, and vanilla until smooth.
  7. Pour half of the batter into the prepared loaf pan.
  8. Add the cream cheese filling in a line down the center, then top with remaining batter.
  9. Bake for 50-60 minutes, until a toothpick comes out clean.
  10. Let cool before serving.

Notes

For best results, use room temperature cream cheese and ingredients. Don’t overmix to keep the loaf fluffy.
