Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups grated carrots
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Optional: chopped walnuts or pecans for garnish
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.
- In another bowl, mix sugar, brown sugar, oil, and eggs until well combined.
- Gradually add the dry ingredients to the wet ingredients, mix just until combined.
- Fold in the grated carrots.
- In a bowl, combine cream cheese, powdered sugar, and vanilla until smooth.
- Pour half of the batter into the prepared loaf pan.
- Add the cream cheese filling in a line down the center, then top with remaining batter.
- Bake for 50-60 minutes, until a toothpick comes out clean.
- Let cool before serving.
Notes
For best results, use room temperature cream cheese and ingredients. Don’t overmix to keep the loaf fluffy.
