Description
A rich and flavorful fruitcake filled with dried fruits and nuts, perfect for festive occasions.
Ingredients
- 2 cups mixed dried fruits (raisins, currants, cherries)
- 1 cup mixed nuts (walnuts, almonds)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup orange juice (for soaking)
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 4 large eggs
Instructions
- Soak dried fruits in orange juice overnight.
- Preheat oven to 325°F (163°C) and grease a baking pan.
- Mix dry ingredients: flour, baking powder, spices, and salt in a bowl.
- In another bowl, cream butter and brown sugar together until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Combine the soaked fruits with the butter mixture.
- Gradually fold in the dry ingredients until just combined.
- Transfer the batter to the prepared pan and smooth the top.
- Bake for about 2 hours or until a toothpick comes out clean.
- Let the cake cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.
Notes
For best flavor, make the fruitcake one week in advance and store it properly.
