Description

A rich and flavorful fruitcake filled with dried fruits and nuts, perfect for festive occasions.


Ingredients

  • 2 cups mixed dried fruits (raisins, currants, cherries)
  • 1 cup mixed nuts (walnuts, almonds)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup orange juice (for soaking)
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 4 large eggs


Instructions

  1. Soak dried fruits in orange juice overnight.
  2. Preheat oven to 325°F (163°C) and grease a baking pan.
  3. Mix dry ingredients: flour, baking powder, spices, and salt in a bowl.
  4. In another bowl, cream butter and brown sugar together until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Combine the soaked fruits with the butter mixture.
  7. Gradually fold in the dry ingredients until just combined.
  8. Transfer the batter to the prepared pan and smooth the top.
  9. Bake for about 2 hours or until a toothpick comes out clean.
  10. Let the cake cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.

Notes

For best flavor, make the fruitcake one week in advance and store it properly.
