Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, at room temperature
- 8 oz white chocolate, melted
- 1 cup powdered sugar
- 1 cup heavy cream
- ½ cup pistachios, toasted and chopped
Instructions
- In a bowl, mix graham cracker crumbs with melted butter, then press into the bottom of a springform pan to create a crust.
- In a large mixing bowl, combine room temperature cream cheese and melted white chocolate until smooth.
- Add powdered sugar and mix until well incorporated.
- In a separate bowl, whip heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
- Stir in the toasted pistachios.
- Pour the filling into the prepared crust and smooth the top.
- Chill in the refrigerator for at least 4 hours, or preferably overnight.
- Garnish with extra crushed pistachios and serve with whipped cream and berries.
