Ingredients
- 1 cup pumpkin puree
- 1 cup almond milk
- 2 large eggs
- 1 cup Greek yogurt
- 2 cups rolled oats
- 2 tsp baking powder
- 1 tsp pumpkin pie spice
- Pinch of salt
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the pumpkin puree, almond milk, eggs, and Greek yogurt in a large bowl.
- In a separate bowl, mix the rolled oats, baking powder, pumpkin pie spice, and salt.
- Combine the wet and dry ingredients, then fold in the chocolate chips.
- Pour the mixture into a greased baking dish and bake for 30-35 minutes or until golden and slightly firm.
- Let it cool for about 10 minutes before serving.
Notes
For best results, use old-fashioned rolled oats and fresh pumpkin puree. Adjust spices to your taste.
