Description
A classic homemade chicken soup that warms the body and soul, filled with tender chicken, fresh vegetables, and rich, savory broth.
Ingredients
- 1 whole chicken or bone-in pieces
- 2 onions, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 8 cups chicken broth
- 2 teaspoons fresh thyme
- 2 tablespoons fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Sauté onions, carrots, and celery in a large pot until softened.
- Add the chicken, broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 1 hour.
- Remove the chicken, shred the meat, and return it to the pot.
- Stir in fresh parsley before serving.
- Serve hot, garnished with additional parsley if desired.
Notes
For a gluten-free version, use gluten-free broth. Leftover rotisserie chicken can be used for convenience.
