Description

A delicious sweet and tangy vinaigrette made with fresh or frozen cranberries, perfect for salads and grilled dishes.


Ingredients

  • 1 cup Fresh or Frozen Cranberries (if using frozen, thaw slightly first)
  • 2 tablespoons Honey or Maple Syrup
  • 1/3 cup Apple Cider Vinegar
  • 1/2 cup Extra Virgin Olive Oil
  • 1 teaspoon Dijon Mustard
  • 1/2 teaspoon Salt
  • Freshly Cracked Pepper to taste


Instructions

  1. Rinse fresh cranberries or thaw frozen ones.
  2. In a saucepan, combine cranberries with 1/4 cup of water and simmer for about 10 minutes until they burst.
  3. Strain the cranberry mixture to extract about 1/2 cup of cranberry juice.
  4. In a mixing bowl, whisk together the cranberry juice and honey or maple syrup.
  5. Add apple cider vinegar and Dijon mustard, whisking until combined.
  6. Slowly drizzle in olive oil while whisking to emulsify the vinaigrette.
  7. Season with salt and pepper to taste, adjusting sweetness or acidity as desired.
  8. Transfer to a glass jar, seal, and refrigerate for at least 30 minutes before serving.
  9. Shake well before serving over salads, grilled vegetables, or meats.

Notes

Adjust sweetness by adding more honey or maple syrup. Experiment with fresh herbs for added flavor.
