Description
Make your own crystallized ginger at home with fresh ginger, sugar, and water for a natural snack.
Ingredients
- 1 pound Fresh Ginger Root
 - 2 cups Granulated Sugar
 - 1 cup Water
 - 1 tablespoon Lemon Juice (optional)

Instructions
- Peel the ginger root and slice it into thin strips, about 1/8 inch thick.
 - In a medium-sized saucepan, combine the sliced ginger with 1 cup of water and bring to a gentle boil. Cook for approximately 30 minutes.
 - Strain the ginger slices using a fine-mesh sieve and rinse under cold water.
 - Return the ginger to the saucepan, add 2 cups of sugar and 1 cup of water. Stir until sugar is dissolved and simmer gently for 45 minutes to 1 hour.
 - Once the ginger is translucent and the syrup thickens, remove from heat and cool for 10-15 minutes.
 - Prepare a baking sheet lined with parchment paper and remove ginger pieces from syrup, coating them in granulated sugar.
 - Let the ginger dry at room temperature for 24 hours before storing in an airtight container.

Notes
