Description

Cozy and comforting meatballs simmered in a bright, garlicky marinara, perfect for any crowd.


Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 large egg
  • 1/2 cup fine breadcrumbs
  • 1/4 cup milk
  • 1/2 cup grated Parmesan cheese
  • 3 cloves minced garlic
  • 1 small finely diced onion
  • 1/4 cup chopped parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 pinch crushed red pepper
  • 2 tbsp olive oil (for browning)
  • 28 oz can crushed tomatoes
  • 1 tsp sugar
  • 1 tsp dried oregano


Instructions

  1. Mix the ground beef and pork with the egg, breadcrumbs, milk, Parmesan, garlic, onion, parsley, salt, pepper, and red pepper.
  2. Form 1 1/4–1 1/2 inch meatballs and chill for 15 minutes.
  3. Brown meatballs in a skillet with olive oil or bake at 400°F (200°C) for 15–18 minutes.
  4. For the marinara, sauté onion and garlic in olive oil until soft.
  5. Add crushed tomatoes, sugar, oregano, salt, and pepper; simmer for 15–20 minutes.
  6. Add browned meatballs to the sauce and simmer for another 10–15 minutes until the internal temperature reaches 160°F (71°C).

Notes

For best results, do not overmix the meat mixture. Chill meatballs to help them hold their shape before cooking.
