Description

Ingredients

  • 2 cups pure maple syrup
  • Optional: pinch of salt or vanilla


Instructions

  1. In a 2–3 quart heavy-bottomed saucepan, bring maple syrup to a boil over medium heat.
  2. Use a candy thermometer and cook to 235°F (112°C) — the soft-ball stage.
  3. Remove from heat and let cool undisturbed to about 140°F (60°C).
  4. Beat vigorously with a wooden spoon or stand mixer on low until thick and opaque.
  5. Spoon or press into silicone molds or a parchment-lined pan to set.

Notes

Use 100% pure maple syrup for best results. A heavy-bottomed saucepan is essential to prevent scorching.
