Ingredients
- 200 g (2 cups) blanched almond flour
- 120 g (1 cup) sifted powdered sugar
- 1/8 tsp fine salt
- 1 tsp almond extract
- 1 large pasteurized egg white or 2 tbsp light corn syrup
Instructions
- Combine almond flour, powdered sugar, fine salt, almond extract, and egg white or corn syrup in a food processor.
- Pulse until the mixture forms a cohesive dough, about 30–60 seconds, scraping down the bowl once.
- Turn the paste onto a silicone mat and knead lightly until smooth; if it’s dry, add warm water or syrup a teaspoon at a time.
Notes
Use blanched almond flour for the smoothest texture. Store airtight in plastic wrap and a sealed container. Chilling the dough helps with shaping.
