Ingredients
- 1 pound pearl onions
- 1 cup distilled white vinegar
- 1/2 cup sugar
- 1 teaspoon salt
- 1 teaspoon mustard seeds (optional)
- 1/2 teaspoon black peppercorns (optional)
Instructions
- Blanch the pearl onions in boiling water for 2-3 minutes to soften the skins, then drain and cool.
- Peel the onions once cooled.
- In a saucepan, combine vinegar, sugar, salt, and optional spices; bring to a simmer.
- Place onions in a sterilized jar and pour the hot brine over them, ensuring they are fully submerged.
- Seal the jar and let cool at room temperature for a few hours, then refrigerate for at least 24 hours before enjoying.
