Description

A moist, warmly spiced quick bread that combines ripe banana sweetness with crisp apple and honey for a delightful flavor.


Ingredients

  • 3 very ripe bananas (about 1 1/2 cups mashed)
  • 1/3 cup honey
  • 1/3 cup melted butter (or neutral oil)
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 1 tsp ground cinnamon
  • 1 medium apple, grated (about 1 cup)
  • 1/2 cup chopped walnuts or raisins (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the bananas in a bowl and stir in honey, melted butter or oil, eggs, and vanilla.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Gently fold in the grated apple and optional walnuts or raisins.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 55–70 minutes until a toothpick comes out clean or the internal temperature reaches 205°F (96°C).
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for best flavor and moisture. Grate the apple finely to prevent large pockets of moisture.
