Description
A moist, warmly spiced quick bread that combines ripe banana sweetness with crisp apple and honey for a delightful flavor.
Ingredients
- 3 very ripe bananas (about 1 1/2 cups mashed)
- 1/3 cup honey
- 1/3 cup melted butter (or neutral oil)
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp fine salt
- 1 tsp ground cinnamon
- 1 medium apple, grated (about 1 cup)
- 1/2 cup chopped walnuts or raisins (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mash the bananas in a bowl and stir in honey, melted butter or oil, eggs, and vanilla.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon.
- Fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the grated apple and optional walnuts or raisins.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 55–70 minutes until a toothpick comes out clean or the internal temperature reaches 205°F (96°C).
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe bananas for best flavor and moisture. Grate the apple finely to prevent large pockets of moisture.
