Ingredients
- 2 cups fresh corn kernels (or frozen corn, thawed)
- 1/4 cup honey
- 2 large eggs
- 1 cup milk
- 1/2 cup butter, melted
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together honey, eggs, milk, and melted butter.
- Gently fold in the corn, flour, baking powder, salt, and pepper until just combined.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 45 minutes or until the center is set and a toothpick comes out clean.
- Allow to cool slightly before serving. Garnish with chopped parsley if desired.
Notes
For a gluten-free option, substitute the all-purpose flour with a gluten-free flour blend. For a cheesy casserole, mix in 1 cup of shredded cheddar cheese.
