A quick, nutritious bowl featuring tangy lime, sweet honey, and juicy chicken, perfect for busy weeknights.
Ingredients
- 1/4 cup honey
- 3 tablespoons fresh lime juice
- 1 tablespoon lime zest
- 2 minced garlic cloves
- 1 tablespoon soy sauce (or tamari)
- 1 tablespoon olive oil
- 1/2 teaspoon chili flakes
- Salt and pepper to taste
- 1.25 lb boneless skinless chicken thighs (or breasts)
- 1 tablespoon oil for cooking
- 2 cups cooked rice
- Greens or roasted veggies for serving
Instructions
- Whisk together honey, lime juice, lime zest, garlic, soy sauce, olive oil, chili flakes, salt, and pepper.
- Toss chicken in the marinade and let sit for 30–60 minutes or 10 minutes if short on time.
- Heat a cast iron or nonstick skillet over medium-high heat, add oil, and sear chicken for 3–4 minutes per side until golden.
- Finish cooking in a preheated 400°F oven for 6–8 minutes or until the internal temperature reaches 165°F.
- Rest chicken for 5 minutes before slicing.
- Assemble bowls with rice, greens or roasted veggies, sliced chicken, and extra sauce drizzled on top.
Notes
For a glossy sauce, simmer the reserved marinade for 2–3 minutes to thicken.
