Description

A quick, nutritious bowl featuring tangy lime, sweet honey, and juicy chicken, perfect for busy weeknights.


Ingredients

  • 1/4 cup honey
  • 3 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 2 minced garlic cloves
  • 1 tablespoon soy sauce (or tamari)
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili flakes
  • Salt and pepper to taste
  • 1.25 lb boneless skinless chicken thighs (or breasts)
  • 1 tablespoon oil for cooking
  • 2 cups cooked rice
  • Greens or roasted veggies for serving


Instructions

  1. Whisk together honey, lime juice, lime zest, garlic, soy sauce, olive oil, chili flakes, salt, and pepper.
  2. Toss chicken in the marinade and let sit for 30–60 minutes or 10 minutes if short on time.
  3. Heat a cast iron or nonstick skillet over medium-high heat, add oil, and sear chicken for 3–4 minutes per side until golden.
  4. Finish cooking in a preheated 400°F oven for 6–8 minutes or until the internal temperature reaches 165°F.
  5. Rest chicken for 5 minutes before slicing.
  6. Assemble bowls with rice, greens or roasted veggies, sliced chicken, and extra sauce drizzled on top.

Notes

For a glossy sauce, simmer the reserved marinade for 2–3 minutes to thicken.
