Description

A delightful side dish featuring creamy, tender sweet potatoes drizzled with a spicy-sweet hot honey glaze.


Ingredients

  • 4 large sweet potatoes, peeled and sliced into 1-inch rounds
  • 1/2 cup hot honey
  • 1 teaspoon red pepper flakes
  • Salt, to taste
  • Parchment paper, for baking


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange the sweet potato slices in a single layer on the baking sheet.
  3. Sprinkle with salt and roast for 30 minutes, or until fork-tender.
  4. In a small saucepan, warm the hot honey with red pepper flakes.
  5. Drizzle the hot honey mixture over the roasted sweet potatoes and return to the oven for 5 minutes to caramelize.
  6. Remove from the oven and serve warm, optionally drizzled with extra hot honey.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat in the oven for optimal texture.
