Description

A delightful dish combining sweet roasted sweet potatoes, rich feta cheese, and a drizzle of honey, perfect for any meal or snack.


Ingredients

  • 2 large sweet potatoes, peeled and sliced into ½-inch thick rounds
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon fresh thyme leaves (plus extra for garnish)
  • 3 tablespoons honey
  • ½ cup crumbled feta cheese


Instructions

  1. Preheat your oven to 425°F. Line a large baking sheet with parchment paper to prevent sticking.
  2. Arrange the sweet potato slices in a single layer on the baking sheet. Drizzle them with olive oil and sprinkle evenly with salt, pepper, and fresh thyme. Flip each slice to coat both sides thoroughly.
  3. Bake for 15–20 minutes, then flip the rounds over. Roast for an additional 10–15 minutes until they are golden and tender.
  4. While still warm, drizzle the rounds lightly with honey and sprinkle with crumbled feta cheese.
  5. Add extra fresh thyme before serving for a bright, herby finish.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave before serving.
