Ingredients
- 2 large sweet potatoes, peeled and sliced into ½-inch thick rounds
- 2 tablespoons olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 1 tablespoon fresh thyme leaves (plus extra for garnish)
- 3 tablespoons honey
- ½ cup crumbled feta cheese
Instructions
- Preheat your oven to 425°F. Line a large baking sheet with parchment paper to prevent sticking.
- Arrange the sweet potato slices in a single layer on the baking sheet. Drizzle them with olive oil and sprinkle evenly with salt, pepper, and fresh thyme. Flip each slice to coat both sides thoroughly.
- Bake for 15–20 minutes, then flip the rounds over. Roast for an additional 10–15 minutes until they are golden and tender.
- While still warm, drizzle the rounds lightly with honey and sprinkle with crumbled feta cheese.
- Add extra fresh thyme before serving for a bright, herby finish.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave before serving.
